Guangzhou cuisine ranks among China’s top four cuisines or eight cuisines depending on different classifications. It uses as many as 21 cooking techniques notably stir-frying, pan-frying, deep-frying, simmering, stewing and braising.

1. Fish Ball Fried with Vegetable

This dish is a very ordinary and simple dish in Cantonese cuisine but it is very toothsome. The fish ball is chosen from the dace which is a kind of fish living only in fresh water. A fresh green vegetable together with the white fish balls is absolutely a wonderful combination.

2. Honey BBQ Pork

In Guangzhou, the folk particularly love Honey BBQ Pork, just like American is fond of beefsteak and like French favorite of cheese. Even those who don't like meat dishes can fall in love with it.

The streaky pork is the major material of Honey BBQ Pork. Firstly, the pork is cut into strips and then pickled for 24 hours with many flavorings. Then the pork strips can be toasted in oven. During the toast time, the pork strips will be brushed with juice even 10 to 15 minutes and it should be brushed for 3 to 4 times. After the last brushing, change the fire into quick fire and open the oven door. Until the face of the pork turn to blacken, get it out of the oven. Slicing the strips is the last step. Then the yum BBQ Pork is edible.

3. Steamed Grass Carp

The steamed grass carp is one of the popular Cantonese dishes. It is famous for tender and fresh taste. Every visitor loves it. The dish is also general food in Cantonese families, because the cooking method is easy and it is benefit for people's health.

4. Cantonese Soup

This is one kinds of special soup, as a key factor for evaluating an individual's skill of cooking. It is only Guangzhou people who are willing to spend at least three hours to brew a qualified soup. A lot of ingredients are added and hence intensified the effects of the soup. It is said that the soup can get rid of folk's inner heat and humidity that accumulate from the sweltering summer days and frequent rainfall both hovering Guangzhou. Soup has been so significant to the daily life of Cantonese.

5. Baiyun Trotter

Baiyun Trotter is one of Cantonese traditional dishes, fat but not greasy, crisp, and fresh. This dish is reputed to have originated on the Baiyun Mountain and hence, gets its name. In this dish the bone and flesh on the trotter are easily separated and its skin being tender and the flesh crisp. This dish goes very nicely with wine and is said to improve the complexion and maintain a sense of youthfulness.

This dish is available in general restaurants in Guangzhou, and Baiyun trotter in the restaurant on the peak of Baiyun Mountain is the most delicious.

6. Golden Medal Roasted Sucking Pig

Roasted Sucking pig is the most representational traditional food in Guangzhou and usually served for special occasions. It has a history of more than 1,400 years and nowadays is well known for having been awarded the "Golden Medal".

The meat of the sucking pig is pale and tender and the skin is crispy and highly valued as pork rinds. The texture of the meat is somewhat gelatinous.

7. Fried Tofu with Shrimp

This kind of fried tofu is easily found in each restaurant of Guangzhou. The tofu is cut into 0.5-inch cubes, and then put into a bowl and covered by the hot water. Heat the bowl. Put the 0.5-inch shrimp nugget onto the tofu cube. When the tofu is cooked well, add into salt, sugar, rice wine and soy sauce. Stir to combine.

The results showcase how tofu can absorb the flavors of its companion ingredients while becoming velvety. The shrimp shell stock gives the dish a real seafood taste.

8. Shahe Noodles (Shahefen)

Shahefen is a kind of rice noodles, which probably originate from the town of Shahe, now part of Guangzhou. The noodles are broad and white in color. Their texture is elastic and a little chewy. They do not freeze or dry well and are thus generally (where available) purchased fresh, in strips or sheets that may be cut to the desired width. Shahefen is popular in southern China,s Guangdong, Guangxi and Hainan provinces.

9. Crispy Stir Fry Pancakes

Crispy stir fry pancakes are sweet and crispy snacks in Cantonese cuisine. The custard powder can enhance the aromatic flavor for the recipe. It is cooked by special care.
