It is known to all that Chengdu cuisine is famous for its "hot and spicy" flavor. Chili and peppercorn is the mainly seasoning of Chengdu dishes.

1. Chengdu Hot Pot

Chengdu Hotpot is very popular in Sichuan Province, and even in China. It is known for its spicy and hot flavor. There are over 10 varieties of Chengdu hotpot including fish head hotpot, tonic hotpot, entire sheep hotpot, four tastes hotpot and Yuanyang hotpot and so on.

A small pot filled with hot spicy oil and surrounded by plates of raw meats and vegetables. The pieces of meat and vegetables are sliced very small so they will cook very quickly.

Most of the pots used in hotpot are divided into two sections. One half is filled with the spicy oil, and the other is filled with a delicious broth for those who are not a big fan of spicy foods. Restaurants are also more than happy to turn down the heat on request.

Nowadays, many kinds of big hotpots were brought in from Chongqing by the locals and have become the current Chengdu hotpot. The famous Chongqing hotpot in Chengdu: Chengqing Lao Ma Tou Hot Pot, Kong Liang Hot Pot, Liang Lu Kou, Shu Jiu Xiang, Lao Zhao Hot Pot, and Zhu Juan Hot Pot.

2. Chengdu Chuan Chuan Xiang

In Chengdu, if you miss to taste the Chuan Chuan Xiang, you will never touch the essence of the Chengdu eating culture.

There is an unspeakable fact that so-called Chengdu or Sichuan hot pot originated in Chongqing. Before Chongqing hot pot invaded, Chengdu hot pot is actually named Chuan Chuan which is a pot of hot spicy oil filled with skewers of vegetables and meat.

At present, the famous Chuan Chuan includes Qiangjiaojiao Chuan Chuan Xiang, Xiaojiahe Lao Chuan Chuan, Yulin Chuan Chuan Xiang and Leshan Niuhua Chuan Chuan Xiang.

Qiangjiaojiao means the corner of a wall. The Chuanchuan is hided in the corner for serving up the most delicious skewers in town. Locals cook their oil on top of the old coal bricks that can only be found in the countryside now. For old locals, Chuanchuan and coal bricks are inseparable and without the bricks, the taste lacks heart. The best materials of Chuanchuan are the sweet potato noodles and the cold rice noodles. They are dropped into the Chuanchuan pot and left to seep while locals strip skewers of chicken gizzards, cauliflower and pork bits.

3. Cheng Mapo Tofu (Mapo Bean Curd)

This blush branch of the famous chain is a great place to sample Mapo Tofu – soft, fresh bean curd with a fiery sauce of garlic, minced beef, salted soybean, chilli oil and Sichuan pepper. It's one of Sichuan's most famous dishes and this restaurant's speciality.

Mapo Tofu is bean curd set in a chili-and-bean based sauce, which is usually a thin, oily, and bright red suspension, and often topped with minced meat, usually pork or beef. Seasonings include water chestnuts, onions, other vegetables, or wood ear fungus. The taste of Mapo Bean Curd is fittingly described as numbing, spicy hot, fresh, tender and soft, aromatic and flaky. Mapo Bean Curd is easy to find outside of China.

4. Chengdu Hotchpotch (Mao Cai)

The dish is a very typical one for Chengdu citizens. The unique cooking process and taste will make you immediately love here. This kind of Mao Cai can not be found in other cities of China. So it is a characteristic dish.

It is more or less similar to have a buffet. When you enter into restaurant, you can choose what food you would like to eat. It is also different from the buffet because all of these materials are raw for you to choose. Various meats and vegetables are served including steak, pork, chicken, seafood, onion, cauliflower, eggplan, etc.

The materials chosen by you will be deep fried in oil for a minute or two. After the ingredients are fried, they are removed from the skewers and finely diced. Then, they are stir fried in a wok and other ingredients chosen by the customer are added. It is so delicious.

5. Fuqi Fei Pian (Husband and Wife Lung Slices)

Fuqi Fei Pian is made of thinly sliced beef, bovine lung or tongue seasoned with chili oil. There is a romantic story of the origin of this famous Sichuan dish. Guo Zhaohua (the inventor) and his wife sold their acetarious (treated with vinegar) beef slices by trundling a small cart along the street. Their beef slices were very delicious, and no one could resist the charming smell in that street. People liked the food made by this couple very much, so they gave it the name Husband and Wife Lung Slices.

6. Spicy Diced Chicken (Gongbao Jiding)

Spicy Diced Chicken is cooked by frying diced chicken, dry red pepper and golden peanuts. Spicy Diced Chicken is as popular among Westerners as Mapo Bean Curd.
